A little about how pumpkins and autumn came about:
Autumn is when the pumpkin harvest comes in, so it's one of the symbolic vegetables of that time of year. ... Native Americans introduced pumpkins to the early American settlers - like the Pilgrims - and pumpkins became a huge food source for them, as well.
Also,
as part of their autumnal celebration, people wanted to light the way to their homes for the good spirits, so they carved faces into vegetables such as turnips and squash. A light was placed within the hollowed out vegetable.
